    Facing the Kosi river tucked in the beauty of dense Corbett National Park lies Taj Corbett Resort & Spa. With the lush wilderness of the national park, the resort is rooted in its Paathya ESG philosophy. The resort comes alive with décor influenced by Uttarakhand’s artisanal heritage—featuring intricate Aipan motifs, pine needle elements, handcrafted candles, and earthy metal accents that celebrate local craftsmanship.

    But what caught my attention was this beautiful Makrut Deck at Taj Corbett Resort & Spa, a serene dining destination where refined Thai and Oriental cuisine comes alive amid the natural beauty of Corbett National Park. Surrounded by lush forests and tranquil landscapes, Makrut Deck offers an immersive culinary journey that blends authentic flavours, elegant presentation, and the calming rhythms of nature.

    The kitchen helmed by Bidyut Saha – Executive Chef at Taj Corbett Resort and … saw some very interesting from the bold heat of Thai flavours to the comforting depth of Chinese wok-fired dishes, our chefs present a vibrant celebration of Asian cuisine on every plate. Set outdoors at Makrut Deck (Makrut means – kaffir lime), this refined dining experience is elevated by whispering breezes and the gentle flow of the river, creating an atmosphere that feels almost otherworldly.

    The meal started with some Som Tam (Thai rawa papaya salad), followed by some Tom kha the Thai coconut spicy soup infused with lemongrass, galangal and makrut lime leaves.  From delicate Exotic Vegetable Dim Sum to the perfectly fried Golden fried prawns to those delicate thai roll, each dish reflects precision, balance, and refined presentation. Winter favourites—offer a warming harmony of spicy and sour notes. Equally loved is Pho from Vietnam, a comforting noodle soup layered with slow-simmered broth, herbs, and gentle spices. Together, these dishes celebrate the essence of Thai and Southeast.

    At Makrut, Asian cuisine sees a harmonious blend of freshness, bold contrasts, and captivating aromas, coming together to create soulful dishes that feel perfectly attuned to the season. Each element is thoughtfully crafted and carefully executed, allowing flavours to unfold with balance and depth.
