Inspired from the shokunin-waza of a sushi master, Japanese Chef Atsushi Yonaha embodies this title with grace and precision, bringing over a decade of expertise to his culinary creations. Born and raised in Okinawa, Japan, Yonaha’s journey into the culinary arts began in his family’s kitchen, where he first fell in love with the art of sushi. Yonaha’s journey is a testament to the dedication required to master the intricate art of sushi making. His training spanned years of rigorous practice and learning, honing his skills under the guidance of seasoned sushi masters. Fugu or blowfish chefs are considered among the elite craftsmen in the very competitive field of Japanese chefs and it takes years of committed practice to attain this licence. Chef Yonaha received his Fugu licence in 2010. From selecting the freshest ingredients to perfecting the delicate balance of flavours, Yonaha’s approach to sushi is both methodical, technical, and deeply personal.

    Each dish is a work of art, meticulously crafted to highlight the natural flavours of the ingredients hailing all the way from Japan.
