    Secret Ingredient Champions Sustainability with Farm-to-Table Concept at Mharo Khet

    Secret Ingredient continues to shape the future of dining in India by weaving sustainability and authenticity into its projects. Known for curating experiences that balance creativity with consciousness, the consultancy has reimagined Mharo Khet’s dining journey, an organic farm-to-table experience set amidst 40 acres of farmland in Jodhpur.

    With a deep emphasis on locally sourced, seasonal produce, Secret Ingredient designed a food and beverage program and architectural vision that highlights Mharo Khet’s commitment to mindful living. Over 95% of the ingredients used are sourced directly from the farm’s organic gardens, ensuring that every dish celebrates nature’s cycles while minimizing environmental impact.

    The program introduces two distinct dining spaces. Samaa, an all-day dining and bar, offers Indian flavours in a relaxed yet contemporary setting. Aab, on the other hand, focuses on light bites and refreshing beverages for leisurely moments. A highlight of the experience is Mharo Khet’s cyclic menu, which evolves with the growing seasons. Each course reflects a different stage of an ingredient’s life, from seedling to harvest, with a hero element celebrated at  every step.

    “We see sustainability as more than just a buzzword; it’s a responsibility,” said Sid Mathur, Founder and Director of Secret Ingredient. “Every plate is meant to remind guests of the journey their food has taken, from under the earth to their table. For us, it’s a responsibility to honour that journey by cooking with care, minimising waste, and creating a truly sustainable dining experience.”

    “At Mharo Khet, our goal has always been to connect guests with nature in the most authentic way possible,” said Rajnush Agarwal. “Secret Ingredient has helped us translate that vision into a dining program that feels both rooted and forward-looking. This project is a true celebration of sustainability, seasonality, and the farm-to-table philosophy.”

    Through this collaboration, Secret Ingredient underscores its commitment to building concepts that are socially responsible, ecologically conscious, and creatively inspiring, setting new standards for India’s evolving food and hospitality landscape.
