As I stepped into the Crowne Plaza Edesia on the evening of September 7, 2024, the air buzzed with an infectious energy. The elegantly dressed staff welcomed me with warm smiles but the real invitation came from the aroma wafting through the air—a tantalizing blend of spices that promised an unforgettable culinary adventure.
The theme “Pind Di Rasoi” had transformed my familiar Edesia into a vibrant Dhaba—a rustic homage to North India’s roadside eateries. As I walked further inside, I was greeted by colorful decor resembling a bustling roadside joint. String lights twinkled overhead creating an inviting atmosphere. The lively chatter of guests and the music blended with the sizzling sounds from the kitchen, transporting me to the heart of Punjab.
My culinary journey began at the Sardar Ji Ke Kebabs Corner. The smoky, charred aroma was irresistible. I ordered a plate of seekh kebabs that were marinated to perfection, bursting with flavour at every bite. I felt like I was sitting around a roadside fire as I savoured the tender meat nestled inside freshly baked naan, a moment amplified by the sound of laughter and chatter around me.
Next, I ventured to the Gama Pahalwan Tawa Counter, where the sight of the chef expertly flipping Amritsari Kulchas was a treat in itself. I chose the paneer-stuffed version, and the first bite was a revelation—crispy on the outside and steaming hot, with spices that danced on my palate. Paired with a tangy chutney, it tasted just like the ones I remembered savouring during long road trips through the countryside.
As I strolled further, my senses were overwhelmed by the lively chaos of the street food stalls. Each vendor was an artist in their own right, crafting mouthwatering chaats that beckoned with their vibrant colours and aromas. I joined a small gathering around a stall selling dahi puri, relishing the burst of flavours as the tangy yogurt and chutney melded with the crisp puris.
It was then that I noticed a small crowd gathered at the Lovely Da Mittha.
Nostalgia with Spiral Delight – Jalebis
Everyone was drawn to the tantalizing smell of freshly fried Jalebis at the other corner. I navigated my way to the stall and ordered a plate, hoping to relive the sweet childhood memories associated with this delicacy. The golden spirals crackled as I bit into them, and the warm syrup coated my tongue, taking me back to festive street fairs where Jalebi was a must-have. Each bite was an irresistible reminder of the joy of simple, flavourful food.
Chef Umesh, the mastermind behind the show, shared with TW that “we aimed to showcase the authenticity of our food and beverages while also capturing the essence of a traditional North Indian dhaba atmosphere, despite our limitations. This has truly been a collaborative effort.”
As time ticked by, the atmosphere brimmed with laughter, and the clanking of glasses filled with chilled lassi added to the charm of the evening. I found myself chatting with fellow food lovers, sharing stories of our favourite Dhaba experiences, and recommending must-try dishes, instantly bonding over our shared passion for North Indian cuisine.
The Pind Di Rasoi at Crowne Plaza Edesia had given me not just a meal, but an experience filled with warmth, flavour, and nostalgia. With my belly full and my heart happy, I took one last look around the bustling atmosphere, a fitting tribute to the rich culinary heritage of North India, and promised myself to return before the festival closed on the 15th. With a heart full of joy and a stomach that mirrored my delight, I left Edesia with the taste and spirit of a true Dhaba still swirling in my mind.
