    Pilibhit House introduces a curated collection of seasonal specials crafted with regional Himalayan ingredients known for their inherent warmth and health benefits. Developed by Chef Rohit Dubey, these creations pay homage to the traditional winter diet of the hills while presenting it with a modern, global sensibility.

    “Winter is a beautiful season to cook for; it invites a different kind of creativity,” says Chef Rohit Dubey, Executive Chef, Pilibhit House – IHCL SeleQtions. “This season naturally brings out the depth of Himalayan ingredients, from gahat dal to red rice and fresh turmeric. Each carries centuries of wisdom, relied upon by our ancestors for strength, warmth, and healing. Our intention is to honour those traditions while presenting them in a way that feels comforting, modern, and deeply nourishing for today’s guest.”

    In this all-vegetarian winter menu, hearty bowls and warming plates come together in a tapestry of flavours and benefits. The Soupy Ramen Bowl warms the body and boosts immunity with ginger and miso, while the Sour & Pepper Soup offers respiratory comfort with spices that soothe seasonal congestion. For deeper nourishment, the Himalayan Noodles Soup brings together fresh turmeric and regional greens to reduce inflammation, and the Tandoori Broccoli delivers a balance of Vitamin C and warm spices that support digestion and body heat.
