    Organic Bistro Opens at Khan Market with Seasonal Menu

    Organic Bistro is the newest entrant in the premier Khan Market with a clear vision to make clean, natural meals while not compromising on the taste and experience. Spread across 40 covers, the all-day dining space is defined by pastel interiors, abundant daylight and a menu built on seasonal produce and regional inspiration.  Co-owned by Saru Khemka and Arjun Gupta, the bistro rests on a simple idea: serve food that’s rooted in clarity and care, without boxing it into trends or dietary fads.

    The kitchen is helmed by celebrated chef Nishant Choubey and in-house chef Gourav Singh Mahori. Signature dishes include Natural Pigmented Purple Potato Dahi Vada, Peri Peri Chickpea Hummus with Tzatziki, Truffle Beetroot and Ricotta Shami, Chicken Urfa Kebab, Jackfruit Haleem, Torched Portobello with Achari Rajma Khichri, and Jackfruit Biryani. The beverage list includes smoothies, cold-pressed juices, and organic teas & coffees, all crafted without preservatives or additives.

    “We wanted to break the binary that often defines restaurants in this space; either you’re indulgent or you’re clinical. We’ve built Organic Bistro for the middle ground,” said Saru Khemka, co-founder and director. “Our menu is designed for people who want flavour without compromise and clarity without complexity. We’re building something that people can return to, again and again. You could walk in for a solo meal or come with friends; the experience remains honest, inclusive, and unfussy. What sets us apart is our commitment to clean comfort food served all day; supported by chef-driven specials and a rotating selection of seasonal dishes. That’s the philosophy we’ll carry forward as we expand.”

    The menu avoids restrictive categories; there’s no posturing around diets, nor is there an overdependence on international plating. Instead, the kitchen relies on combinations that are both thoughtful and rooted in what people enjoy eating today.

    “There’s been a visible shift in the way diners approach food. They’re open to new ideas but cautious, informed but not always drawn to gimmicks,” said Chef Nishant Choubey, who co-curated the menu. “At Organic Bistro, we’ve responded to this shift with intention. The goal was to create a menu that welcomes rather than excludes. Diners want a salad to feel thoughtful, not sparse. A drink should refresh, not resemble a medicine. We’ve blended traditional cues with small, considered twists to keep the experience intuitive. Whether it’s comfort or curiosity guiding your choice, the plate should always feel relevant.”

    The Khan Market outlet will soon expand with 25 additional covers on the upper level. A Chandigarh flagship is next in the pipeline.
