Food Exchange at Novotel New Delhi Aerocity in association with Gormei, announces An Ode to Patliputra Food Festival, a ten-day culinary showcase celebrating the vibrant and deeply rooted flavours of Bihar. From 21st to 30th November, guests are invited to embark on an authentic gastronomic journey through the state’s rich culinary heritage – a cuisine known for its earthy simplicity, bold use of mustard oil and spices, and heart-warming, home-style appeal.

The festival will feature a thoughtfully curated menu by Chef Rachna Prasad, popularly known as Ek Ladki Bihari. A proud Patna native with roots in Gaya, Chef Rachna has devoted her career to spotlighting Bihar’s traditional food on the national stage. Having begun her journey with the Taj group and later founding Ambrosia in Mumbai, she has earned recognition for redefining regional Indian cuisine, with accolades such as the Best Asian Cuisine Award (Living Foodz), Notable HomeChef of India, and numerous honours from Godrej, UpperCrust, and The Times Food Guide.

The festival menu will spotlight Bihar’s most beloved dishes, crafted using age-old recipes and time-honoured techniques. Each dish reflects the state’s cultural richness and culinary ingenuity, celebrating flavours shaped by fertile farmlands, traditional cooking methods, and community spirit.

Highlighted dishes include Dhuska, Litti Chokha, Mutton Goli, Champaran Mutton, Khatta Meetha Kohra, Sehjan Aloo, Dehati Murgi, along with much-loved desserts like Malpua Rabdi, Khaja, Thekua and much more.

Manish Dayya, General Manager, Pullman & Novotel New Delhi Aerocity, mentioned, “Bringing India’s regional stories to the forefront has always been central to our culinary vision. The Patliputra festival is a tribute to Bihar’s depth of flavours, age-old techniques and vibrant food traditions. Having Chef Rachna Prasad lead this celebration at Food Exchange adds an authentic, rooted touch that her craft reflects the soul of the region and the nostalgia it evokes. We’re delighted to present an experience that reconnects guests with a cuisine shaped by history, simplicity and heart.”

Savour the elaborate menu during dinners and Sunday brunches, where Chef Rachna Prasad and the Food Exchange culinary team present An Ode to Patliputra Food Festival — a heartfelt tribute to Bihar’s culinary legacy and the soulful stories it tells through every bite.
