    Bangalore, August 2024: Los Cavos is all set to samba into Bengaluru’s hotspot Indiranagar. Launching this August, the new restaurant by V&RO Hospitality promises punchy Peruvian plates and artful cocktails with Chef Rafael Estremadoyro García at the helm. Get pampered with chef curations of Nikkei delights amidst colourful bold decor, to experience a journey through flavours, cultures, stories and melodies. Garcia’s two-Michelin star expertise unfolds a vibrant culinary dimension and techniques to create the ultimate Cavos Experience.

    What sets Los Cavos apart is the chef-driven food and beverage program. It mildly draws inspiration from an intriguing artefact “El Libro Mágico” – The Magical Book, discovered in the hidden corners of Latin America. Its contents reveal a treasure trove of lost recipes and enchanting tales which now replicate on your plate through Rafael Garcia’s creations. When a Peruvian chef from Italian descent and with years of global experience is in charge of the food, you can be certain that every dish brings the best and most authentic flavours to your table.

    The menu celebrates the richness of Peru, with a blend of Japanese, Spanish, and Italian influences globally known as Nikkei cuisine. The chef’s precision and passion define and distinguish Los Cavos with perfect piquancy to its food and cocktails.

    From the appetisers Beef Carpaccio, Hamachi Tiradito, Los Cavos Ceviche and the Umami Corn Ribs are a must-try. For a fulfilling main course, the chef recommends Lamb Chops, Gochujang Carbonara, Pork Belly with Chaufa Rice, Lomo Saltado and Beef Steal with Bone Marrow. Pair these with cocktails that once again draw inspiration from the rhythms of Latin America to perfectly complement your small and large plates. Primarily a tequila, mezcal and pisco forward beverage program, you can sip on a classic Pisco Sour or indulge in a smoky mezcal creation that captures the essence of the region. Picante, Chilcano, and Mexican Revivor are also at par to enjoy the fun spirits. Follow it up with a sweet ending indulgence in Churros, Tiramisu or Al Fagor which is truly nostalgic and leaves a soft yet delicious aftertaste that’s had to forget.
