Get ready to embrace the wonderfully weird. Goa has a new sound – and it’s served fresh, straight from the staged tanks to your glass. Lizard King Brewing Co. opened on 26th October 2025, unleashing an untamed spirit of beer, music, and rebellion that refuses to play safe.

Born not from boardrooms but from a ride through a wild forest road on a motorbike, loud riffs, and one unforgettable encounter with a monitor lizard, the brewpub was imagined as a space to celebrate the bold, the brash, and the brilliantly bizarre.

“It’s that moment when a monitor lizard on the forest road looked back at me like it owned the place. That’s when I knew this brewpub had to be here, raw, fearless, and impossible to ignore,” recalls George Jacob, frontman and brewmaster.

This isn’t a beach shack with pineapple cocktails. This is Lizard King Brewing Co. – beer, rock music, community, and rebellion poured straight into your glass.

    BEERS THAT COMMAND THE STAGE

The lineup is unapologetically beer-first: a setlist of audacious brews designed to hit like guitar solos and demand an encore.

    • Apple Cider – Crisp, dry, oaked, and untamed. A riff on tradition forged in Himachal orchards, swaggering with attitude.
    • Mango Cider – Alphonso mango meets apple in a tropical mashup. Juicy, medium-bodied, and outrageously fun – your permanent backstage pass.
    • Pilsner – Clean, crisp, and electric. Saaz hops and German malt ripping out a  classic headliner anthem.
    • Best Bitter – Deep amber, smooth malt riffs, balanced hops. A nod to British pub roots dialled up to eleven.
    • Irish Stout – Dark, roasty, velvet-smooth. A midnight encore in a pint – intense yet creamy.
    • Belgian Wit – Citrus, coriander, spice. A festival headliner that keeps the crowd dancing.
    • Pale Ale – Biscuity malts, citrus hops, lively carbonation. Bright, crisp, and built for crowd-surfing taste buds.
    • Launch Special – Saison – Rustic, tart, unpredictable. Each sip is a wild encore,  a jam session in liquid form.

“Every beer we pour comes with the energy of the first chord at a sold-out rock gig. We don’t whisper – we announce,” says George. “I’ve brewed in the UK, in India, across cask ales, sours, IPAs, and fruit-forward experiments. But this – this is our loudest record yet.”

GEORGE JACOB – THE BREWMASTER ON TOUR

Known to friends as “Royally Tanked”, George Jacob has spent over a decade on a brewing world tour. Brewlab UK–certified, he has created award-winning beers, brewed at iconic breweries in England (Darwin, Mordue, Sonnet43, Three Kings), as well as top  Indian brewpubs in Bangalore, Hyderabad, and Pune.

His cult creations include the Grapefruit IPA, which won an award sponsored by Castle Eden Brewery, Head of Steam and Brewlab in the UK. He has also brewed this at Aurum Brew Works in Bangalore (which was a best-seller), the Mango Duet Cream Ale at Zero40 Brewing, the barrel aged Raspberry IPA at Aurum Brew Works, and experimental hits like the Mango Jalapeño IPA in collaboration with  Effingut for Tapped 8.0. With specialities spanning cask ales, sours, and fruit-forward beers, George has built a reputation for brewing with technical precision and the swagger of a guitarist on stage.

    FOOD THAT SHREDS ALONGSIDE

With beer as the headliner, the food is no opening act. George has consulted a brilliant chef to build a menu that riffs off pub classics while nodding to Goa’s produce and spice culture.

    • Steak & Onion Pie / Chicken & Mushroom Pie / Cottage Cheese & Pea Pie – served with a side salad and gravy; comfort food that hits like a power ballad.
    • Fish & Chips – Sea bass (Chonak) in a stout and vodka batter, hand-cut fries, and tartar sauce that packs a coastal punch.
    • Chicken Fried Steak – Crumb-fried steak with white gravy and mash; bold,  crunchy, and unapologetically indulgent.

“Food has to surprise you the way a killer solo does,” George explains. “From pies to steaks, everything here is designed to play alongside the beer. Nothing predictable,  nothing safe – every dish is a power chord built to move you.”

Cocktails like stout espresso martini and cider spritz round out the beverage program. Ingredient sourcing focuses on Goan seafood, local produce,  and Indian malts, keeping it fresh, sustainable, and community-connected.

THE SPACE – A BREWERY MEETS A MUSIC ROOM

Designed by George himself, the space is built around its heart: the brewery plant, a row of gleaming stainless-steel tanks and polished steel piping deliberately left exposed so brewing isn’t hidden – it’s part of the show.

The brewpub is intimate, with seating for 28 and room for a floating crowd – more front-row gig than mass concert.

The layout flows from the indoor bar and brew floor into an airy extension framed by large windows that spill onto outdoor seating, creating openness and flow. Dark wood finishes warm the industrial steel, while walls covered in vintage rock posters – from Nirvana to The Stones – bring the vibe of an artist’s rehearsal room.

Above the bar, a custom mural by a Hyderabad-based artist (she also brews beer!)  maps the brewing process in bold strokes, a visual setlist linking tank to tap.

“The tanks, the mural, the limited edition rock concert posters – they’re not decor, they’re instruments. Brewing here is visible, audible, alive,” George explains.

The design came with its challenges. “You’re balancing engineering with atmosphere.  Every pipe, every light, every wall had to work like a stage setup – technical, but built for showtime,” George says. From the start, the brewery wasn’t just about tanks and taps – it was about crafting a living, breathing machine that could deliver both precision and soul.  The team faced the brutal math of space constraints, ventilation puzzles, and the choreography of brewing flow. Fermentation vessels had to align with sightlines. Drainage systems had to disappear into the aesthetic. Even the grain mill had to hum in tune with the vibe. “We weren’t just installing equipment – we were composing a symphony of steel,  steam, and swagger,” George adds. The result? A plant that runs like clockwork but feels like a backstage pass to something wild.

    A COMMUNITY-LED BREWPUB

Brewed for renegades. Branded for legends. And damn good beer.

Lizard King Brewing Co. isn’t built to be everything to everyone – it’s designed as a community-led bar where riders, locals, and seekers of something real come together over pints that roar.

From weekly rider meet-ups to nights when the community curates the playlist, every evening becomes a shared gig.

“We’re not here to open just another bar – we’re here to headline your night,” George says. “Every guest here is front row, every night is a gig. Strangers don’t just drink together – they become part of the band. Every beer freshly poured is an anthem.”

    OPERATIONS & FUTURE VISION

Service is kept unpretentious and guest-first – staff are trained to know their beer and keep the vibe alive. Guests can expect walk-in only entry, quick ordering, menus, and music playlists tuned to shift with the crowd.

“The first year is about building the tribe,” George says. “After that, we take the tour on the road – new cities, new stages, new communities. Goa is just the opening act.”
