For four decades, Café Lilliput in Anjuna has been more than a beachside eatery—it’s a living archive of Goa’s original free-spirited coastal culture. In this exclusive interview with Travellers World, co-founder Rajendra Salgaonkar reflects on preserving authenticity, evolving with global tastes, the magic of open-air music, and the deep bond with the local Goan community that continues to define Lilliput’s timeless charm.
What defined the original beach culture here, and how has its core spirit been preserved?
The original beach culture in Anjuna was defined by freedom, simplicity, and a deep sense of community. Travellers, artists, and music lovers from around the world gathered here to experience Goa in its purest form, slow, warm, and unstructured. Café Lilliput grew out of that era, and we have always held onto the essence that made Anjuna special. Even as the landscape modernised, we preserved our open-air setting, our easy-going hospitality, our connection to the sea, and a culture where everyone feels at home. The goal has always been to evolve without losing the soul of what was built 40 years ago.
How do you balance authentic coastal cuisine with evolving traveller tastes?
Our approach has always been to honour coastal flavours while listening to what global travellers enjoy today. Staples like our seafood grills, prawn curry, and Goan favourites remain unchanged, because they represent the heart of Lilliput. At the same time, we’ve expanded with continental dishes, wood-fired pizzas, risottos, sizzlers, and comfort classics to cater to diverse palates. The balance comes from keeping the food honest, unfussy, and flavour-forward, rather than chasing trends. Everything is designed to complement long afternoons by the sea and high-energy evenings by the shoreline.
What role has open-air music played in shaping your venue’s day-to-night transition?
Music is the bridge between our calm daytime atmosphere and our high-energy nights. In the day, guests enjoy laid-back coastal playlists with ocean sounds in the background. As the sun sets, the tempo naturally shifts the sky turns golden, the crowd settles in, and the music becomes the heartbeat of the night. Our open-air setup allows the sound, the breeze, and the environment to merge into one experience. Over the decades, this day-to-night rhythm has become part of Lilliput’s identity.
As a legacy venue, what’s your biggest challenge in staying relevant today?
The challenge is evolving without losing authenticity. New venues come up every season, each more modern or themed than the last. But people continue to return to Lilliput for what feels real the warmth, the nostalgia, the oceanfront simplicity. We’ve adapted where necessary in design, service, and music, but we hold on to the emotional connection guests have with the space.
How has the local community influenced your brand’s ethos over four decades?
The local Goan community has shaped everything about Lilliput, from our culture of hospitality to our values of warmth, inclusivity, and consistency. Many of our team members have been with us for years, and their connection to Anjuna’s heritage keeps us grounded. The community’s trust and support have helped Lilliput remain a place that feels like home, not just a venue.
