With over 15 years of experience and a Guinness World Record to his name, Chef Malkani is recognised for translating global culinary influences into compelling, contemporary narratives. In his new role, he will lead the culinary direction across ICONIQA’s signature dining destinations — Aviator, Bombay Swim Club, Kadak, Tiffin Terrace, and Scarletta — each designed as immersive, high-energy experiences.
His appointment reinforces ICONIQA’s distinctive “un-hotel” philosophy, where food and beverage sits at the core of the guest journey.
