HyLo Taproom by Igloo Goregaon arrives at International Business Park, Oberoi Garden City, bringing its celebrated hyper-local dining experience to one of Mumbai’s fastest-growing business and dining destinations as Goregaon continues to emerge as a vibrant culinary and commercial hub. Following the success of its previous two outlets the new 120-seater taproom expands the brand’s footprint with award-winning craft beers, Hylogenized cocktails a homogenizer-led technique that emulsifies ingredients into a smooth, textured pour and a menu that celebrates India’s rich regional culinary heritage and a menu that celebrates India’s rich regional culinary heritage.
The new outlet marks a significant expansion of the brand’s footprint in Mumbai, Goregaon has been envisioned for a neighbourhood that seamlessly moves from business lunches and post-work drinks to long dinners and late-night conversations. Surrounded by some of Mumbai’s largest corporate offices, production houses and creative businesses, the new outpost aims to become the area’s go-to taproom, where great food and serious drinks come together effortlessly.

“With the response we received in BKC, we realised that people weren’t just looking for another restaurant or bar, they were looking for a place they could keep coming back to,” says Mayank Bhatt, Founder, All In Hospitality. “Goregaon felt like the natural next step because it has an incredibly vibrant community that appreciates good food and great drinks, but lacks a taproom experience built with this level of intent. Our vision has always been to create spaces that celebrate India’s culinary diversity while making craft beer and cocktails more approachable. This outlet allows us to continue building that culture.”
At the heart of HyLo continues to be its philosophy of HYper LOcal – an idea that goes far beyond sourcing local ingredients. The menu is an exploration of India’s culinary heritage, drawing on regional recipes, indigenous produce and over 600 GI-tagged ingredients that rarely find their way into contemporary restaurant menus. Rather than using “local” as a trend, HyLo treats it as an opportunity to preserve, celebrate and reintroduce India’s culinary stories to a wider audience.
Helmed by Chef Mrigank Singh, Culinary Director, All In Hospitality, and Chef Swati Harsha, Brand Chef, HyLo, the menu features Taproom favourites that have already become signatures. Guests can expect dishes like the Aam aur Mircha Wings, made with Ratnagiri mangoes and Nagaland’s Raja Mircha; indulgent Curried Dogs inspired by regional Indian curries; flavour-packed Smash Sliders; and a range of small plates and regional mains that celebrate Indian cooking with honesty without reinvention.
Complementing the food is Igloo Craft Beers, whose award-winning brews remain central to the HyLo experience. Guests can enjoy signature pours, including the crisp Konkan Rice Lager, brewed with locally sourced aromatic rice; the refreshing Belgian-style Wit & Wisdom; and Mumbai Daze, a juicy New England IPA bursting with tropical fruit notes. Rotating seasonal brews and tasting flights further reinforce HyLo’s ambition of making craft beer more accessible while encouraging guests to explore different styles alongside food.

One of the biggest differentiators at the Goregaon outlet is its Hylogenized Cocktails – a technique-led cocktail programme built around a professional Homogenizer Squasher, allowing the bar team to create textures, aromas and flavour combinations that are nearly impossible to achieve through conventional methods. The result is a collection of cocktails with exceptionally smooth mouthfeel, stable foams and layered flavour profiles that remain consistent from the first sip to the last.
Signature serves include Tiger Tiger, where kala khatta meets cranberry, raspberry and fortified Nashik wine; Forbidden Fruit, blending tequila, port wine and tropical fruits into a remarkably silky cocktail; and the customisable HyLo Sours, each elevated through the precision of homogenisation. Alongside these, cocktails like the Aarey Tribal Story, featuring Gondhoraj, smoked Naga chilli and mezcal, continue HyLo’s philosophy of celebrating Indian ingredients through contemporary mixology.
The design language at International Business Park, Oberoi Garden City, also introduces a distinct identity for the brand. Conceptualised by Caleo Architects & Designers, the space moves away from the cooler palette of the BKC outlet and embraces bold red tones, brushed stainless steel finishes and atmospheric lighting that create an energetic yet intimate setting. While functionally similar to the flagship, the new outlet carries a stronger visual personality, reflecting the evolution of the HyLo brand.
Every element, from the carefully curated music and attentive service to the seamless interplay between food, beer, cocktails and interiors, has been designed to make HyLo more than just another restaurant.
