    Food Exchange at Novotel New Delhi Aerocity invites guests on a gastronomic journey across India with ‘Tracks to Plate’, a special culinary showcase inspired by an iconic train route connecting Punjab, Delhi, Rajasthan, Madhya Pradesh, Gujarat and Maharashtra. Curated by our very own Master Chef Uzair, the limited-period promotion celebrates the rich culinary heritage of these regions through an authentic selection of local favourites, traditional recipes and signature specialties that capture the distinctive flavours of each state.

    The specially curated menu traces a flavourful path across the states, bringing together regional specialties from each destination under one roof. Guests can look forward to a diverse selection of dishes ranging from robust Punjabi favourites and Delhi’s beloved street-food classics to the rich royal flavours of Rajasthan, comforting specialties from Madhya Pradesh, vibrant Gujarati delicacies, and iconic Maharashtrian preparations. Crafted using traditional recipes and regional ingredients, each dish offers a glimpse into the food culture that makes every stop unique.

    Leading the experience is Master Chef Uzair Siddiqui, whose culinary journey spans over two decades across India, Mauritius and Germany. Renowned for his expertise in Indian cuisine, Chef Uzair combines traditional techniques with a contemporary approach, crafting a menu that is rooted in authenticity while thoughtfully elevated for today’s diners.
