    Encalm Hospitality Invites Travellers to Experience India’s Regional Flavours Through ‘A Taste of Independent India’

    This Independence Day, Encalm Hospitality is inviting travellers to discover India’s rich culinary heritage through ‘A Taste of Independent India’, a week-long gastronomic celebration showcasing regional cuisines from across the country at its airport lounges.

    Hosted from 8th to 15th August across Encalm Lounges in Delhi, Hyderabad and Goa, the campaign presents a different regional menu each day, offering travellers an opportunity to explore authentic flavours inspired by India’s diverse culinary traditions. The experience culminates on Independence Day with a specially curated menu celebrating the country’s unity through food.

    Inspired by the campaign theme ‘One Nation. Six Regions. Countless Flavours.’, the menus have been curated by Chef Ritesh Negi, Head of Culinary, Encalm Hospitality, and the culinary team to showcase the unique ingredients, recipes and traditions across six distinct regions of India. Each day celebrates a different culinary landscape, featuring regional favourites such as Murgh Malai Tikka, Chettinad Chicken, Chicken Dak Bungalow, Fish Koliwada, Bhopali Chicken Korma and Manipuri Chicken Curry, alongside vegetarian classics including Avial, Paneer Hyderabadi, Matar Paneer and Paneer Bhopali. Guests can also savour interactive regional specials like Kolkata Jhalmuri, Dahi Bhalla Papdi Chaat, Dabeli, Pesarattu with Chutney and Indori Aloo Ratalu Chaat, before ending their meal with traditional desserts such as Kesar Phirni, Coconut Semiya Payasam, Sandesh, Mohanthal and Sheer Khurma, bringing together the flavours and traditions that define India’s remarkable culinary diversity.

    Beyond the menus, guests can discover the stories behind every dish through regional narratives, transforming each meal into a celebration of India’s culinary heritage. More than a festive menu, A Taste of Independent India is an invitation to rediscover India’s culinary heritage through dining experiences that celebrate regional identity and craftsmanship.

    Chef Ritesh Negi, Head of Culinary, Encalm Hospitality, said, “Every region of India has its own culinary identity shaped by generations of tradition, local ingredients and unique cooking techniques. Through ‘A Taste of Independent India’, we wanted to bring these stories to travellers, allowing them to experience the country’s remarkable diversity through authentic regional flavours.”

    Designed to transform the airport lounge into a destination for culinary discovery, the campaign reflects Encalm Hospitality’s commitment to creating elevated dining experiences that celebrate India’s rich gastronomic legacy while enhancing every traveller’s journey.
