In Dham, each dish carries its own meaning and significance. For example, Madra is a yogurt-based dish that resonates with the locals as Chamba is famous for its milk and lentils. There is also Chana Dal made with Sauf, Telia Mah or Mash Ki Dal(prepared in mustard oil), Khatta prepared with Aamchur or Tamarind, Kadhi, and Mittha, all of which have slight variations depending on the region. The cuisine is entirely rice-based; no bread is served.
