    Courtyard by Marriott Mumbai International Airport announces the appointment of Rohin Thankappan as its new Executive Chef. Bringing over 18 years of culinary expertise across leading hospitality destinations in India and overseas, Chef Rohin joins the hotel to lead its culinary vision, bringing together thoughtful innovation, operational excellence and a deep understanding of evolving guest preferences.

    As Executive Chef, he will oversee the hotel’s restaurants, banqueting operations and in-room dining, with a focus on refining culinary experiences, strengthening kitchen operations and nurturing a culture where creativity, consistency and collaboration thrive. His appointment reflects the hotel’s continued commitment to offering dining experiences that are contemporary, relevant and rooted in genuine hospitality.

    Throughout his career, Chef Rohin has led diverse culinary teams across business hotels and resort destinations, building a reputation for combining classical culinary foundations with a modern outlook. His experience includes participation in Michelin chef pop-ups and internationally inspired culinary showcases, shaping an approach that values technical precision while remaining responsive to changing dining preferences.

    Equally passionate about people as he is about food, Chef Rohin believes that strong kitchens are built on mentorship, trust and continuous learning.
