    This November, the treasured flavours of Tamil Nadu cuisine arrive in Vijayawada carrying stories of spice, memory and heritage. Novotel Vijayawada Varun welcomes the city to the Tamil Nadu Food Festival, an experience imagined not just as a meal but as a gentle journey into the soul of the state.

    At the heart of the festival is Chef Kaviyarasu Sundaraju, a proud member of the South India Chefs’ Association and a chef deeply committed to preserving and elevating South Indian culinary heritage. With extensive expertise in Chettinadu, Kongunadu, Achi Samayal, Madurai specialities and Nanjil Nadu (Kanyakumari) cuisine, Chef Kaviyarasu’s approach is rooted in authenticity, regional flavours and the preservation of traditional cooking techniques.

    Executive Chef Shivaramakrishna J shares, “Tamil Nadu cuisine carries the rhythm of tradition and the warmth of families who cooked from the heart. With this festival, we uphold Novotel Vijayawada Varun’s promise to bring meaningful culinary journeys to our guests while celebrating the diversity that enriches India’s vibrant food landscape. Chef Kaviyarasu’s culinary showcases across India have been widely appreciated for their authenticity, balanced flavours and refined presentation, and we are delighted to host him.”

    From 22 to 28 November 2025, Food Exchange, the hotel’s all day dining address, transforms into a vibrant celebration of Tamil culture. The buffet dinner features a curated menu that showcases the essence of Tamil Nadu cuisine cooking, shaped by balance, intensity and tradition. Live counters echo the charm of bustling Tamil kitchens, inviting guests to watch flavours come to life, while the theme décor offers a delicate glimpse of the region’s rustic beauty. Highlights include aromatic favourites such as Chettinad Chicken, Kothu Parotta and other regional specialties that embody the heart of Tamil cuisine.

    As these flavours find their way to Vijayawada, the festival becomes an invitation to slow down, savour heritage, and rediscover the joy of food made with memory.
