Blue Tokai Coffee Roasters celebrated the launch of Blue Tokai Origins at Banjara Hills, making it their second such space in Hyderabad. The opening brings the brand’s most immersive coffee experience to a new part of the city, deepening its roots in a market with a thriving coffee culture.

“Hyderabad is the only city where we’ve opened two flagships in under six months. People here don’t just want a great cup, they want to understand what goes into making one. That curiosity is what makes us want to build here, for the long run,” said Shivam Shahi, Co-Founder, Blue Tokai Coffee Roasters.

    The Origins Experience

At Blue Tokai Origins, guests can explore some of India’s rarest micro-lots alongside chef-curated meals. The space highlights Indian estates, regional terroirs, and a wide range of brewing methods, reinforcing the brand’s farmer-first philosophy.

At the Play Bar, experimental coffee lots frozen at peak flavour, are preserved in a temperature-controlled space. This rotating selection, handpicked by Blue Tokai’s roasting team, brings something new and exciting each month. Features have included micro-lots fermented with farm-grown cultures, aged in wine barrels, sourced from up-and-coming coffee origins like Meghalaya, and co-processed by smallholder farms. Guests can also taste their way through seven distinct brewing methods, including Chemex, Syphon, Slow Drip, and more.

Adding to this is the Nitro Cold Brew tap, serving chilled, nitrogen-infused single-origin cold brew crafted using patented technology that extracts a wider range of flavour compounds.

    A Chef-Curated Menu

Origins’ menu was curated in collaboration with Auroni Mookerjee. He has cemented himself as one of India’s leading chefs, with defining stints at chef Ritu Dalmia’s Diva Group in Delhi, as well as Sienna Store & Cafe and The Salt House in Kolkata.

At Origins, his flavour-first approach translates into a menu that balances comfort and craft. Highlights include:

    • Handmade pastas with twists such as Chilli Crunch Carbonara
    • Gourmet club sandwiches and open-faced toasts built on signature sourdough breads by Suchali’s Artisan Bakehouse
    • A selection of desserts featuring familiar comforts and sweet surprises such as classic tiramisu and a light-yet-decadent Coconut Berry Lamington
    • Select meals from this special menu also feature across Blue Tokai’s neighbourhood cafés.

    A Community-First Space

For Hyderabad’s growing, tight-knit coffee community, Origins is a space to meet like-minded people while diving deeper into their interests. Cuppings, workshops, and cultural events make it a catalyst for learning and exchange.

“Origins is for anyone who wants to slow down and know coffee better. Whether through conversations with baristas, curated tastings, or a meet-and-greet with producers, it is a space that connects growers, brewers, and drinkers. Questions are very welcome here, said Shivam Shahi.

    Nine Stores and Growing

Since November, the brand has opened nine stores in Hyderabad. Different spaces draw different crowds, but diverse offerings ensure something for everyone. In Sattva Knowledge Park, customers enjoy americanos and easy breakfast options. In Gandipet, visitors bond over shareable meals. In Jubilee Hills and Banjara Hills, at the brand’s flagship stores, coffee lovers get a chance to dive deeper into the craft.

“Hyderabad has felt like home since our first cafe here. We love being a part of the city’s different rhythms, and in the coming six months, the plan is to launch 10 more spaces”, said Shivam Shahi.
