Bengaluru, May 7 2025: BLR Restaurants Pvt Ltd launches Hachi by Tenya, developed in collaboration with chefs and techniques inspired by Tokyo-based Tenya known for perfecting the art of tempura — elevating it from refined indulgence to everyday comfort food since 1989. A name that means “bowl” in Japanese, Hachi marks a new chapter in cross-cultural collaboration, built on a deep respect for tradition, craftsmanship, and hospitality.
In recent years, Bangalore’s appetite for Japanese cuisine has grown rapidly, with diners seeking out everything from delicate sashimi and comforting bowls of ramen to premium sake and izakaya-style bites. As the city’s food culture becomes more experimental and global, Hachi steps in to offer a truly authentic, chef-led experience that celebrates the quiet artistry of Japanese cooking in an approachable, intimate format.
“We’ve long admired the simplicity and soulfulness of Japanese cuisine. With Hachi, we wanted to bring that spirit to life in a space that’s intimate, authentic, and deeply interactive,” said Prasanna Kumar, Co-founder, BLR Restaurants Pvt Ltd. “This is a true culinary collaboration —one that allows our guests to engage with Japanese food, service, and craftsmanship in a way that’s both approachable and extraordinary.”
Hachi’s layout is compact yet experiential, featuring a 12-seat chef’s counter that wraps around the open kitchen, allowing guests to chat with the chefs, observe precise knife work, and witness tempura as it’s flash-fried to golden perfection. This diner-style seating setup embraces omotenashi — the Japanese philosophy of wholehearted hospitality, where the guest’s comfort and delight are always anticipated.
At the helm is Chef Takahashi, who has spent over two decades with Tenya in Japan, alongside Chef Nagai, whose training in Kyoto and Tokyo informs a culinary style that’s both disciplined and expressive. Together, they lead Hachi’s kitchen with the quiet grace of masters at work.
“Our goal with Hachi is to share not just Japanese food, but Japanese heart,” said Chef Takahashi, Executive Chef, Tenya. “We’ve brought traditional techniques, heritage ingredients, and a deep love for the craft — from our kitchen to yours, in a city that celebrates good food.”
The menu is a celebration of Japanese staples with focused execution:
- Crisp, delicate tempura, the signature of Tenya, is flash-fried at higher temperatures to ensure better oil drainage, resulting in an exceptionally light and almost ethereal texture
- Silken ramen bowls, each crafted with our homemade chicken oil and scallion oil to enhance the deep umami and richness loved in Japan.
- Sushi rolls, made with rice seasoned with in-house-made vinegar infused with delicate dashi. Each roll is crafted by hand, with heart and precision.
- Sake and Cocktails with Japanese Ingredients, thoughtfully selected to complement the umami-rich menu.
Guests can also expect small plates like Agedashi Tofu, Chicken Karaage, and Dashimakitamago, served with artisanal precision.
